Originally from Sayville, New York, Hugh Mercer was born into the shellfishing business. His father worked for Bluepoints Company, an oyster harvesting and shipping corporation in Great South Bay. Mercer followed in his father’s footsteps before answering an ad in a fish journal soliciting funds for a pompano fish farm venture north of Marineland, Florida. Mercer’s self-described “chancy proposition” speaks to the volatility of working with natural resources and marine species.
